  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • ½ cup buttermilk
  • ½ cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Add in the eggs, vanilla extract, and mashed bananas, mixing until well combined.
  5. Alternate adding the flour mixture and buttermilk to the butter mixture, mixing until just combined.
  6. Fold in the mini chocolate chips.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool completely on a wire rack.

  • For an extra touch, top cupcakes with whipped cream and a cherry before serving.
