  • 1 pound beef stew meat, cut into cubes
  • 1 cup barley
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 2 bay leaves

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef and brown on all sides.
  3. Stir in the onion, carrots, celery, and garlic; cook until softened.
  4. Add the broth, barley, thyme, pepper, and bay leaves; bring to a boil.
  5. Reduce heat and simmer for 1.5 hours, or until beef and barley are tender.
  6. Remove bay leaves before serving.

Notes

  • This soup can be made in a slow cooker as well; simply cook on low for 6-8 hours.
  • For a thicker soup, add less broth.
