- 1 pound beef stew meat, cut into cubes
- 1 cup barley
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 8 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 2 bay leaves
- In a large pot, heat olive oil over medium heat.
- Add the beef and brown on all sides.
- Stir in the onion, carrots, celery, and garlic; cook until softened.
- Add the broth, barley, thyme, pepper, and bay leaves; bring to a boil.
