  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar (for crumb topping)
  • 1/4 cup flour (for crumb topping)
  • 2 tablespoons butter (for crumb topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, vegetable oil, sugar, eggs, and vanilla until smooth.
  3. In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Add dry ingredients to the wet ingredients and mix until just combined.
  5. In a separate bowl, mix brown sugar, flour, and butter for the crumb topping.
  6. Fill muffin cups with the pumpkin batter and sprinkle crumb topping on each.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
