- 1 cup sugar
- 1/2 cup vegetable oil
- 3 eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine pumpkin puree, sugar, and oil.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the pumpkin mixture until just combined.
- In a separate bowl, beat together cream cheese and powdered sugar until smooth.
- In muffin cups, add a spoonful of pumpkin batter followed by a spoonful of the cream cheese mixture. Swirl with a toothpick.
