  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine the canned pumpkin, sugar, vegetable oil, and eggs.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, salt, nutmeg, and ginger.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined. If desired, fold in walnuts.
  5. Pour batter into prepared muffin cups, filling each about 2/3 full.
  6. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For added flavor, consider adding chocolate chips or a cream cheese filling.
