  • 2 medium sweet potatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn tostadas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss with olive oil, cumin, chili powder, and salt.
  3. Spread the sweet potatoes on a baking sheet and roast for about 25 minutes, or until tender.
