Black Bean Quinoa Tacos (with Cilantro Lime Crema!) DF GF V

A delicious and easy recipe for Black Bean Quinoa Tacos topped with a fresh Cilantro Lime Crema.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 bell pepper, diced
  • 1/2 cup corn
  • 1 avocado, sliced
  • 8 taco shells

Instructions

  1. Rinse the quinoa under cold water and then combine it with vegetable broth in a pot. Bring to a boil.
  2. Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
  3. In a separate pan, sauté bell pepper with cumin and chili powder until softened.
  4. Add black beans and corn to the bell peppers, and heat through.
  5. Fold the quinoa into the bean and vegetable mixture.
  6. Serve in taco shells, topped with sliced avocado and cilantro lime crema.

Notes

  • For a spicier option, add diced jalapeños to the filling.
