  • 1 medium butternut squash
  • 2 tablespoons maple syrup
  • 1 cup plain Greek yogurt
  • 1/4 cup granola
  • 2 tablespoons pumpkin seeds
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half, scoop out the seeds, and peel the skin.
  3. Cut the squash into cubes and toss them with maple syrup, cinnamon, and salt.
  4. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  5. In a bowl, layer the roasted butternut squash on top of the Greek yogurt.
  6. Sprinkle granola and pumpkin seeds on top for added crunch.
