  • 1 cup blueberries, fresh or frozen
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. In a large bowl, whisk together the eggs, milk, cream, maple syrup, vanilla, cinnamon, and salt.
  2. Cube the bread and place half in a greased baking dish. Top with blueberries and remaining bread cubes.
  3. Pour the egg mixture over the bread, ensuring it’s all soaked. Cover and refrigerate overnight.
  4. The next morning, preheat the oven to 350°F (175°C).
  5. Bake uncovered for 45-50 minutes or until golden brown and puffed. Serve with additional maple syrup.
