Caramelized Leek and Mushroom Gruyere Pasta

  • 2 tablespoons olive oil
  • 2 leeks, trimmed and sliced
  • 8 ounces mushrooms, sliced
  • 1 cup gruyere cheese, shredded
  • 1/2 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and cook until caramelized.
  3. Add the mushrooms to the skillet and cook until soft.
  4. Reduce heat and stir in the heavy cream and gruyere cheese until the cheese is melted and the sauce is creamy.
  5. Drain the pasta and add it to the skillet, tossing to combine.
  6. Season with salt and black pepper to taste.
