  • 1 cup bell peppers, sliced
  • 1 cup onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups salsa
  • 2 cups shredded cheese, cheddar or Mexican blend
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine cooked chicken, bell peppers, onion, black beans, corn, salsa, cumin, and chili powder.
  3. Transfer the mixture to a greased baking dish.
  4. Top with shredded cheese.
