  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup spinach, chopped
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper until combined.
  3. Form mixture into meatballs and place on a baking sheet.
  4. Bake meatballs for 20 minutes or until golden brown.
  5. In a pot, bring chicken broth to a boil and add orzo.
  6. Reduce heat and simmer until orzo is al dente, about 8-10 minutes.
  7. Stir in chopped spinach and allow to wilt.
  8. Add meatballs to the pot and let simmer for another 2-3 minutes.
  9. Drizzle with olive oil before serving.
