  • 1 pound chicken breast, cooked and shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup frozen peas and carrots
  • 1 cup diced potatoes
  • 1/2 cup onion, diced
  • 1/3 cup flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large skillet, cook the onions until translucent.
  3. Add the cooked chicken, turkey bacon, peas and carrots, and potatoes to the skillet.
  4. Sprinkle flour over the mixture and stir to combine.
  5. Slowly pour in the chicken broth and milk, stirring constantly until thickened.
  6. Season with salt, pepper, and thyme.
  7. Pour the mixture into the pie crust.
  8. Cover with the top crust and cut slits for steam.
  9. Bake for 30-35 minutes or until golden brown.
