Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. Gradually add the flour and salt, mixing until combined.
  5. Fold in the chopped pistachios.
  6. Shape the dough into logs, wrap in plastic, and refrigerate for at least 30 minutes.
  7. Slice the logs into rounds and place on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let cool before serving.
