  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup raspberry jam
  • 1/2 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in the eggs and vanilla until well blended.
  4. In another bowl, combine the flour, baking powder, and salt; gradually add to the butter mixture.
  5. Spread half of the dough in the bottom of a greased 9×13 inch pan.
  6. Spread the raspberry jam evenly over the dough.
  7. Drop spoonfuls of the remaining dough over the jam.
  8. Sprinkle with oats.
  9. Bake for 30-35 minutes or until golden brown. Allow to cool before cutting.
