Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing well.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture.
  6. Split the dough in half. Add peppermint extract and red food coloring to one half, kneading until color is uniform.
  7. Roll out both halves of the dough and layer them into a log shape. Chill for 30 minutes.
  8. Slice the log into rounds and place them on a baking sheet.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Let cool on a wire rack before serving.
