Cinnamon Roll Muffins

  • 2 teaspoons baking powder

  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, salt, baking powder, and cinnamon.
  3. In another bowl, whisk together the milk, melted butter, and egg.
  4. Combine the wet and dry ingredients, stirring until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. In a small bowl, mix together the brown sugar and vanilla extract and swirl into the muffin batter with a toothpick.
  7. Bake for 15-20 minutes, or until golden brown.
  8. Allow to cool for a few minutes before serving.
