Cinnamon Roll Muffins

Cinnamon Roll Muffins are a delightful combination of soft muffins and the classic flavors of cinnamon rolls. Perfect for breakfast or a sweet treat any time of day!

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, baking powder, salt, cinnamon, and sugar.
  3. In another bowl, whisk together the melted butter, milk, and eggs.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Divide the batter into the muffin tin, filling each cup about 2/3 full.
  6. In a small bowl, mix together additional sugar and cinnamon for the topping.
  7. Sprinkle the cinnamon sugar mixture on top of the batter in each muffin cup.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Let cool for a few minutes before serving.

Notes

  • For an extra indulgent treat, drizzle with a simple icing made from powdered sugar and milk.
  • These muffins are best enjoyed fresh, but can be stored for a couple of days.
