Cinnamon Roll Muffins

These cinnamon roll muffins are an easy and delicious way to satisfy your cravings for cinnamon rolls without all the fuss.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, ground cinnamon, and salt.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a separate bowl, mix together the brown sugar and ground cinnamon for the filling.
  6. Fill each muffin cup halfway with the batter, then sprinkle some of the cinnamon-sugar mixture on top.
  7. Top with the remaining batter and sprinkle more cinnamon-sugar mixture on top.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before serving.

Notes

  • For extra flavor, add chopped nuts or chocolate chips to the batter.
  • Feel free to drizzle with icing for an extra treat.
