  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, cream together the butter and sugar until fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla, and mix until incorporated.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk until just combined.
  7. Fold in the grated coconut.
  8. Divide the batter evenly into the cupcake liners.
  9. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  10. Let them cool before frosting with coconut icing.

Notes

  • For an extra coconut flavor, sprinkle additional grated coconut on top of the frosting.
