- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup sugar
- 1/4 cup sour cream
- 3 large eggs
- 1/4 cup strong brewed coffee
- 1 teaspoon vanilla extract
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese until smooth. Add sugar, sour cream, eggs, coffee, and vanilla; beat until well blended.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set. Turn off the oven and let the cheesecake cool in the oven with the door ajar.
- Chill in the refrigerator for at least 4 hours before serving.
