  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1/4 cup sour cream
  • 3 large eggs
  • 1/4 cup strong brewed coffee
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese until smooth. Add sugar, sour cream, eggs, coffee, and vanilla; beat until well blended.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 55-60 minutes, or until the center is set. Turn off the oven and let the cheesecake cool in the oven with the door ajar.
  6. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a richer flavor, use espresso instead of brewed coffee.
