  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup diced turkey bacon
  • 1 cup diced chicken ham
  • 1/4 cup shredded cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together cornmeal, buttermilk, eggs, baking powder, and salt until smooth.
  3. Fold in the turkey bacon, chicken ham, and cheese.
  4. Prepare a muffin tin with cooking spray or liners.
  5. Pour the mixture into the muffin tin, filling each cup about two-thirds full.
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  7. Remove from oven and let cool slightly before serving.
