Crispy Smashed Potato Salad with Turkey Bacon and Chicken Ham

- 2 pounds baby potatoes
- 4 strips turkey bacon
- 1 cup chicken ham, diced
- 1/2 cup green onions, chopped
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt to taste
- Black pepper to taste
- Boil the baby potatoes in salted water until tender, about 15-20 minutes.
- Preheat the oven to 450°F (230°C).
- Drain the potatoes and let them cool slightly, then smash each potato with a fork.
- Place the smashed potatoes on a baking sheet and drizzle with olive oil, season with salt and black pepper.
- Bake in the preheated oven for 20-25 minutes or until golden and crispy.
- While the potatoes are baking, cook the turkey bacon until crispy, then chop.
- In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, green onions, chicken ham, and chopped turkey bacon.
- Once the potatoes are baked, let them cool slightly and then mix them into the bowl with the dressing.
- Toss gently to coat and serve warm or at room temperature.
Notes
- For extra crunch, use small quinoa or crumble feta on top before serving.
- Feel free to substitute regular bacon for turkey bacon if preferred.
