Crispy Smashed Potato Salad

A delicious blend of crispy smashed potatoes, turkey bacon, and chicken ham, perfect for any occasion.

Ingredients

  • 2 pounds baby potatoes
  • 4 strips turkey bacon
  • 1 cup chicken ham, diced
  • 1/2 cup green onions, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the baby potatoes in salted water until tender, about 15-20 minutes.
  2. Preheat the oven to 450°F (230°C).
  3. Drain the potatoes and let them cool slightly, then smash each potato with a fork.
  4. Place the smashed potatoes on a baking sheet and drizzle with olive oil, season with salt and black pepper.
  5. Bake in the preheated oven for 20-25 minutes or until golden and crispy.
  6. While the potatoes are baking, cook the turkey bacon until crispy, then chop.
  7. In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, green onions, chicken ham, and chopped turkey bacon.
  8. Once the potatoes are baked, let them cool slightly and then mix them into the bowl with the dressing.
  9. Toss gently to coat and serve warm or at room temperature.

Notes

  • For extra crunch, use small quinoa or crumble feta on top before serving.
  • Feel free to substitute regular bacon for turkey bacon if preferred.
