Crockpot Blueberry Cobbler

  • 2 cups fresh blueberries
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine the blueberries, sugar, and vanilla. Stir gently to combine.
  2. In another bowl, mix the flour, rolled oats, cinnamon, and salt.
  3. Pour the melted butter into the dry ingredients and mix until crumbly.
  4. Layer half of the blueberry mixture in the bottom of the crockpot.
  5. Top with half of the crumb mixture and repeat the layers.
  6. Cover and cook on low for 3-4 hours or until bubbly and golden.
  7. Serve warm, optionally with ice cream.

Notes

  • For a richer flavor, use brown sugar instead of white sugar.
  • Experiment with adding other fruits such as peaches or raspberries.
