- 1 cup quinoa
- 2 cups water
- 1 cup bell pepper, diced
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1 cup carrots, shredded
- 1 cup cilantro, chopped
- 1/2 cup peanuts, crushed
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon ginger, grated
- 2 cloves garlic, minced
- Rinse the quinoa under cold water and drain.
- In a pot, combine quinoa and water. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
- In a large bowl, combine the bell pepper, cucumber, red onion, carrots, cilantro, and peanuts.
- In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey, ginger, and garlic.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
