Crunchy Thai Peanut Quinoa Salad

A refreshing and nutritious salad combining quinoa, vegetables, and a delicious Thai peanut dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup bell pepper, diced
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup carrots, shredded
  • 1 cup cilantro, chopped
  • 1/2 cup peanuts, crushed
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon ginger, grated
  • 2 cloves garlic, minced

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a pot, combine quinoa and water. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes.
  3. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
  4. In a large bowl, combine the bell pepper, cucumber, red onion, carrots, cilantro, and peanuts.
  5. In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey, ginger, and garlic.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve chilled or at room temperature.

Notes

  • Add grilled chicken or tofu for a protein boost.
  • Mix in additional vegetables based on your preference.
