  • 2 cups water
  • 1 bunch asparagus, trimmed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  2. Meanwhile, steam asparagus until tender, about 4-5 minutes. Cut into bite-sized pieces.
  3. In a large bowl, combine cooked quinoa, asparagus, chickpeas, cherry tomatoes, red onion, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
  5. Serve immediately or refrigerate for later.
