Delicious Sweet Potato Breakfast Bowl

A hearty and nutritious breakfast bowl featuring sweet potatoes, turkey bacon, and fresh spinach.

Ingredients

  • 2 medium sweet potatoes
  • 4 slices turkey bacon
  • 2 cups fresh spinach
  • 2 eggs
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Peel and cube the sweet potatoes, then boil them in a pot of water until tender.
  2. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, sauté the fresh spinach in the remaining bacon fat until wilted.
  4. In a separate pan, scramble or fry the eggs as desired.
  5. To assemble, place the sweet potatoes in a bowl, top with spinach, bacon, and eggs. Drizzle with olive oil and season with salt and pepper.
