Easy Chicken Pot Pie Recipe

A delicious and easy chicken pot pie recipe that includes turkey bacon for an added twist.

  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, chopped
  • 1 cup frozen mixed vegetables
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 1/2 cup milk
  • 1 onion, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package pie crusts

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large skillet, cook turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, add onions and cook until translucent.
  4. Stir in flour, then slowly add chicken broth and milk, mixing until smooth.
  5. Add chicken, bacon, frozen vegetables, thyme, salt, and pepper. Stir to combine.
  6. Pour mixture into a pie crust. Cover with second crust, seal edges and cut slits for steam.
  7. Bake for 30-35 minutes or until crust is golden brown.
  8. Let cool for a few minutes before serving.

Notes

  • For a richer flavor, use homemade chicken broth.
  • Can substitute turkey bacon with regular bacon.
