Easy Chicken Pot Pie

  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas and carrots
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 1/4 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 pie crust (top and bottom)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat. Add onion and celery; cook until soft.
  3. Stir in flour until smooth. Gradually add chicken broth and milk, stirring constantly until thickened.
  4. Add chicken, peas, carrots, salt, pepper, and garlic powder. Mix well.
  5. Place bottom pie crust in a pie dish. Fill with chicken mixture. Cover with top pie crust and seal the edges.
  6. Cut slits in the top crust to allow steam to escape. Bake for 30-35 minutes or until golden brown.
  7. Let cool before serving.

Notes

  • For a richer flavor, consider adding a dash of thyme or rosemary.
