- 1 pound chicken breast, sliced
- 2 cups mixed vegetables (broccoli, bell peppers, carrots)
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tablespoons vegetable oil
- 1 teaspoon cornstarch (optional)
- 2 cups cooked rice (to serve)
- Heat vegetable oil in a large skillet over medium-high heat.
- Add chicken breast and cook until browned and cooked through, about 5-7 minutes.
- Stir in garlic, ginger, and mixed vegetables. Cook for another 5 minutes or until vegetables are tender.
- Pour in soy sauce and sesame oil. Stir to combine and cook for an additional 2 minutes.
- If using, mix cornstarch with a little water and add to the skillet to thicken the sauce.
- Serve over cooked rice.
Notes
- For added flavor, marinate the chicken in soy sauce, garlic, and ginger for 30 minutes before cooking.
