  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons vegetable oil
  • 1 teaspoon cornstarch (optional)
  • 2 cups cooked rice (to serve)

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add chicken breast and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in garlic, ginger, and mixed vegetables. Cook for another 5 minutes or until vegetables are tender.
  4. Pour in soy sauce and sesame oil. Stir to combine and cook for an additional 2 minutes.
  5. If using, mix cornstarch with a little water and add to the skillet to thicken the sauce.
  6. Serve over cooked rice.

Notes

  • For added flavor, marinate the chicken in soy sauce, garlic, and ginger for 30 minutes before cooking.
  • Feel free to use any vegetables you have on hand.
