1 cup Oreo cookie crumbs
1/2 cup unsalted butter, melted
8 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 egg
1/2 cup mini chocolate chips
1/2 cup whipped cream for topping
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a bowl, mix Oreo cookie crumbs and melted butter until combined.
Press the mixture into the bottom of the cupcake liners to form the crust.
In another bowl, beat the cream cheese, sugar, and vanilla until smooth.
Add the egg and mix until well combined.
Fold in the chocolate chips.
Pour the cheesecake mixture over the crust and bake for 20-25 minutes.
Let cool and refrigerate for at least 2 hours before serving.
Top with whipped cream and crushed Oreos before serving.
Notes
For best results, use room temperature cream cheese to avoid lumps.
