Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a separate bowl, mix the softened cream cheese with a bit of sugar and set aside.
  6. Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture in the center, then top with more batter.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before serving.
