Easy Low Carb Chicken Casserole

A delicious low carb casserole featuring chicken, turkey bacon, and a medley of vegetables.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup broccoli, chopped
  • 1 cup cauliflower, chopped
  • 1 cup bell peppers, diced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine cooked chicken, turkey bacon, broccoli, cauliflower, bell peppers, and half of the cheese.
  3. In another bowl, whisk together heavy cream, eggs, garlic powder, onion powder, salt, and pepper.
  4. Pour the cream mixture over the chicken and vegetables, stirring until combined.
  5. Transfer to a greased baking dish and top with the remaining cheese.
  6. Bake for 30-35 minutes or until the casserole is set and the cheese is bubbly.
