  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar. Add pumpkin puree, egg, and vanilla extract; mix until combined.
  3. In another bowl, whisk together the oats, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture. Stir until just combined. Gently fold in the chocolate chips.
  5. Drop tablespoon-sized balls of dough onto a lined baking sheet.
  6. Bake for 10-12 minutes, or until the edges are golden and the center is set.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
