Easy Pumpkin Cupcakes with Cream Cheese Frosting

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, oil, and eggs until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into the cupcake liners, filling each about 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the cupcakes cool completely before frosting.
  8. For frosting, beat cream cheese and butter together, then slowly add powdered sugar and vanilla.
  9. Frost the cooled cupcakes with cream cheese frosting and enjoy!

Notes

  • For a pumpkin spice variation, add a pinch of cloves and ginger.
  • Make sure the cream cheese is at room temperature for easier mixing.
