- 2 potatoes, peeled and diced
- 4 slices turkey bacon, chopped
- 1 onion, diced
- 4 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy.
- Add the onion and sauté until translucent.
- Stir in the carrots and potatoes, then add the chicken broth.
- Season with garlic powder, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer until the vegetables are tender, about 20 minutes.
- Using an immersion blender, blend the soup until smooth, or blend in batches in a countertop blender.
- Return to heat to warm through before serving.
