  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 ribs celery, diced
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add the butter, onion, garlic, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
  3. Sprinkle the flour over the vegetables and stir to combine. Cook for 1 minute.
  4. Add the chicken broth, thyme, salt, and pepper. Stir until smooth.
  5. Return the chicken to the pot, and add the peas and heavy cream. Bring to a simmer and cook for an additional 10 minutes, or until heated through.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • To reheat, add additional broth or cream if the soup thickens too much.
