- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cloves garlic, minced
- 3 medium carrots, diced
- 2 ribs celery, diced
- 1 cup frozen peas
- 4 cups chicken broth
- 1 cup heavy cream
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 tablespoons butter
- In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, add the butter, onion, garlic, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
- Sprinkle the flour over the vegetables and stir to combine. Cook for 1 minute.
- Add the chicken broth, thyme, salt, and pepper. Stir until smooth.
- Return the chicken to the pot, and add the peas and heavy cream. Bring to a simmer and cook for an additional 10 minutes, or until heated through.
