Ingredients

  • 1 pound gnocchi
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Remove the bacon, and in the same pot, sauté onions and garlic until translucent.
  3. Add chicken broth and bring to a boil.
  4. Add kale and gnocchi, cooking until the gnocchi are tender.
  5. Lower heat and stir in heavy cream and red pepper flakes.
  6. Crumble the bacon and mix it in, season with salt and pepper to taste.
  7. Serve warm.

Notes

  • For a vegetarian option, omit the turkey bacon.
  • Add more vegetables as desired, like carrots or celery.
