1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
4 cups vegetable broth
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 package (9 ounces) cheese tortellini
1 cup heavy cream
1 cup spinach, chopped
Instructions
In a crockpot, add olive oil, onion, and garlic, and sauté until softened.
Add crushed tomatoes, vegetable broth, basil, oregano, salt, and pepper. Stir to combine.
Cover and cook on low for 6 hours or high for 3 hours.
Stir in cheese tortellini and cook for an additional 30 minutes on high.
Stir in heavy cream and spinach before serving.
Notes
For a richer flavor, use chicken broth instead of vegetable broth.
Add grated Parmesan cheese on top before serving for extra flavor.
