  • 1 tablespoon olive oil
  • 4 slices turkey bacon, chopped
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped turkey bacon and cook until crispy.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer until the broccoli is tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the cheddar cheese and heavy cream. Cook over low heat until the cheese is melted and the soup is heated through.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a thicker soup, blend more of the broccoli.
  • You can substitute the turkey bacon with regular bacon if preferred.
