- 1 medium butternut squash
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- Cook turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, add onions and garlic and sauté until softened.
- Add cubed butternut squash and vegetable broth. Bring to a boil.
- Reduce heat and simmer until squash is tender, about 20 minutes.
- Puree the soup in a blender until smooth, then return to the pot.
- Stir in heavy cream, salt, pepper, and nutmeg. Heat through.
