Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 1 can coconut milk
  • 2 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 lime, juiced
  • 2 cups spinach, chopped
  • 1 tablespoon fish sauce
  • 2 teaspoons brown sugar

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cooking until soft.
  3. Add chicken and cook until browned.
  4. Stir in red curry paste and cook for 1 minute.
  5. Add coconut milk and chicken broth; bring to a simmer.
  6. Add bell pepper, mushrooms, fish sauce, and brown sugar; cook for 10 minutes.
  7. Stir in spinach and lime juice; cook until wilted.
  8. Season with salt and pepper to taste. Serve hot.

Notes

  • For a vegetarian version, substitute chicken with tofu.
  • This soup tastes even better the next day.
