- 1 pound chicken breast, diced
- 1 can coconut milk
- 2 cups chicken broth
- 2 tablespoons red curry paste
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, sliced
- 1 cup mushrooms, sliced
- 1 lime, juiced
- 2 cups spinach, chopped
- 1 tablespoon fish sauce
- 2 teaspoons brown sugar
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, cooking until soft.
- Add chicken and cook until browned.
- Stir in red curry paste and cook for 1 minute.
- Add coconut milk and chicken broth; bring to a simmer.
- Add bell pepper, mushrooms, fish sauce, and brown sugar; cook for 10 minutes.
