- 1 medium butternut squash, peeled and diced
- 1 tablespoon olive oil
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked lentils
- 1/4 cup coconut milk
- In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
- Add the diced butternut squash, vegetable broth, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer until the squash is tender.
- Stir in the cooked lentils and coconut milk, and cook for an additional 5 minutes.
