  • 1/4 teaspoon black pepper
  • 1 cup cooked lentils
  • 1/4 cup coconut milk

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  2. Add the diced butternut squash, vegetable broth, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer until the squash is tender.
  3. Stir in the cooked lentils and coconut milk, and cook for an additional 5 minutes.
