2 cups fresh spinach
Instructions
In a large pot, cook the turkey bacon over medium heat until crispy. Remove bacon and crumble, leaving the drippings in the pot.
Add carrots, celery, and onion to the pot. Sauté until softened, about 5-7 minutes.
Add garlic and cook for another minute until fragrant.
Pour in chicken broth and diced tomatoes, bringing the mixture to a boil.
