  • 1 pound gnocchi
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in garlic and mushrooms, cooking until mushrooms are tender.
  4. Pour in vegetable broth and bring to a boil.
  5. Add gnocchi and cook according to package instructions, about 3-5 minutes.
  6. Reduce heat and stir in spinach and heavy cream.
  7. Season with salt and pepper, and cook until spinach is wilted.
