  • 4 slices turkey bacon

  • 1 cup mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add olive oil and sauté onions and garlic until translucent.
  3. Add mushrooms and cook until softened.
  4. Pour in chicken broth and bring to a boil.
  5. Add gnocchi and cook according to package instructions.
  6. Stir in heavy cream, spinach, and crumbled turkey bacon.
  7. Season with Italian seasoning, salt, and pepper.
  8. Simmer for 5 minutes before serving.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
  • Leftovers can be reheated on the stove with a splash of water to loosen the soup.
