8 ounces lasagna noodles
1 pound turkey bacon
1 medium onion, diced
2 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
4 cups chicken broth
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 cups ricotta cheese
2 cups shredded mozzarella cheese
Instructions
In a large skillet, cook the turkey bacon until crispy, then crumble it into pieces.
In the Crockpot, add the crumbled bacon, diced onion, minced garlic, crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Stir to combine.
Break the lasagna noodles into pieces and add them to the Crockpot.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Before serving, stir in the ricotta cheese and half of the mozzarella cheese.
Top with the remaining mozzarella cheese and allow to melt before serving.
Notes
This soup can be customized with your favorite vegetables.
For a vegetarian version, omit the turkey bacon and use vegetable broth.
