- 2 lbs beef short ribs
- 4 large onions, thinly sliced
- 4 cups beef broth
- 1 cup dry white wine
- 3 tbsp olive oil
- 2 bay leaves
- 1 tsp thyme
- Salt and pepper to taste
- 8 slices baguette, toasted
- 2 cups shredded Gruyère cheese
- In a large pot, heat olive oil over medium heat. Add short ribs and brown on all sides.
- Remove ribs and add sliced onions to the pot. Cook until caramelized, about 20 minutes.
- Return the ribs to the pot. Add beef broth, wine, bay leaves, thyme, salt, and pepper. Bring to a boil.
- Reduce heat to low and simmer for 2-3 hours until the beef is tender.
- Remove ribs, shred the meat, and return it to the soup.
- Serve hot, topped with toasted baguette slices and shredded cheese.
Notes
- For extra flavor, use homemade beef broth.
- You can adjust the thickness by adding more broth if necessary.
