  • 4 large onions, thinly sliced
  • 4 cups beef broth
  • 1 cup dry white wine
  • 3 tbsp olive oil
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste
  • 8 slices baguette, toasted
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add short ribs and brown on all sides.
  2. Remove ribs and add sliced onions to the pot. Cook until caramelized, about 20 minutes.
  3. Return the ribs to the pot. Add beef broth, wine, bay leaves, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat to low and simmer for 2-3 hours until the beef is tender.
  5. Remove ribs, shred the meat, and return it to the soup.
  6. Serve hot, topped with toasted baguette slices and shredded cheese.

Notes

  • For extra flavor, use homemade beef broth.
  • You can adjust the thickness by adding more broth if necessary.
