  • 1 pound sirloin steak, cut into thin strips
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups provolone cheese, shredded
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the steak strips and cook until browned. Remove and set aside.
  3. In the same pot, add the onion and bell peppers, sautéing until softened.
  4. Return the steak to the pot, then pour in the beef broth.
  5. Bring to a simmer, then stir in the heavy cream.
  6. Gradually add the provolone cheese until melted and smooth.
  7. Season with salt and pepper to taste. Serve hot.
