  • 1 can (400 ml) coconut milk
  • 4 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 pack rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup spinach
  • 2 green onions, chopped

Instructions

  1. In a large pot, heat the red curry paste over medium heat for 1 minute.
  2. Add the coconut milk and vegetable broth, and stir well to combine.
  3. Stir in the soy sauce and lime juice.
  4. Bring the soup to a simmer, then add the rice noodles and bell peppers.
  5. Cook until the noodles are tender, about 5-7 minutes.
  6. Add the spinach and green onions, and cook for an additional 2 minutes.
  7. Serve hot, garnished with extra green onions if desired.

Notes

  • For a protein boost, add tofu or chicken.
