- 1 can (400 ml) coconut milk
- 4 cups vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 pack rice noodles
- 1 cup bell peppers, sliced
- 1 cup spinach
- 2 green onions, chopped
- In a large pot, heat the red curry paste over medium heat for 1 minute.
- Add the coconut milk and vegetable broth, and stir well to combine.
- Stir in the soy sauce and lime juice.
- Bring the soup to a simmer, then add the rice noodles and bell peppers.
- Cook until the noodles are tender, about 5-7 minutes.
- Add the spinach and green onions, and cook for an additional 2 minutes.
- Serve hot, garnished with extra green onions if desired.
